Kay’s Burrito Bowls

Spring is here, which means Jake and I have been back to eating dinner past 9pm. I always love trying new quick recipes, this one I just threw together and Jake loved it! I can not wait to try it with our fresh veggies this summer!

Ingredients:

1 lb of Kay’s FarmStand Ground Beef

1 can of Rotel’s  Diced Tomatoes and Green Chiles

1/2 cup of Onion

1 cup of Frozen Corn

2 cups of Cooked Rice

2 tablespoons Taco Seasoning

Shredded cheese, lettuce, and sour cream for topping

Directions:

  1. Cook ground beef, once cooked sprinkle taco seasoning and mix into ground beef.

  2. On low heat, add can of tomatoes, corn, and onion. Cook for 5-10 minutes and stir while it cooks.

  3. Once done, take a scoop of rice and place it on a plate. Take a spoonful of beef mixture and pour over rice.

  4. Top with lettuce, shredded cheese, and sour cream (Must be the dairy farmer in me adding all the dairy haha!) or your favorite burrito toppings!

  5. Enjoy!
